Grandma's Browned Butter Pecan Cookies

Grandma's browned butter pecan cookies were one of my favorites. Second to her homemade chocolate chip cookies if I am being honest. Either she would have just made them, or there were cookies she had frozen to keep for unexpected visitors. Although she has been gone almost 10 years now. Whenever I bake, it makes me think of her.

2 ¼ cup Flour 2 ½ tbsp cornstarch 1 tsp kosher salt 1 tsp ground cinnamon 1 tsp baking soda 1 cup unsalted butter 1 cup dark brown sugar packed ½ cup sugar 2 tsp pure vanilla extract 2 large eggs 2 cup chopped pecans 20 whole pecan pieces
Preheat oven to 350 degrees and line two cookie sheets with parchment paper.
Using a large mixing bowl, whisk together the flour, cornstarch, salt, cinnamon, and baking soda.
Using a small pot, melt the butter over medium heat.
Occasionally stir the butter until it's a golden brown.
Remove from heat and pour the butter into a large heatproof bowl.
Whisk in the brown sugar and sugar until combined.
Beat in the vanilla and eggs, 1 at a time until combined.
Gradually beat in the flour mixture until combined.
Fold in the 2 C of chopped pecans.
Using a medium ice cream scooper, scoop dough onto the cookie sheets.
Place a whole pecan piece onto the top center of the dough mounds.
Bake in the oven for 8-10 minutes or until light golden brown.
Remove from oven and sprinkle with some sugar on top.
Allow cooling before enjoying them!
