Ice Cream Cookie Sandwiches with Chocolate Candies

I am not sure where you are living but here in New York, we have been having high 80s to low 90s for temperatures. This is when these Ice Cream Cookie Sandwiches will be a delight to all that eat them. They are not only delicious but fun too. They are great for a summer's day or a birthday party celebration.

1 cup brown sugar ⅔ cup granulated sugar ½ cup butter salted, softened 2 large eggs 1 tbsp vanilla extract 2 ½ cups flour ½ teaspoon baking soda 1 cups M&M’s ⅓ cup miniature M&M’s ½ gallon ice cream vanilla
Preheat your oven to 350° and line a couple of baking sheets with parchment paper.
In a large mixing bowl, use a hand or stand mixer to mix together the brown sugar, sugar, and butter.
Mix in 2 eggs.
In a separate bowl, combine the flour and baking soda and slowly mix it into your wet ingredients.
Fold in the regular M&M’s.
Scoop out your cookie dough into golf ball-sized scoop, roll them in to small balls, and place them on your baking pan.
Bake for 10 minutes and freeze for about an hour.
Add a scoop of ice cream to the bottom center of one cookie and press the bottom of another cookie onto the ice cream.
Smooth out the sides of the ice cream or roll the sides in miniature M&M’s and wrap and store in an air tighter freezer bag.
Additional time is for the cookies in the freezer before putting the ice cream between them.
You can use any flavor ice cream you would like.
