Instructions
Preheat oven to 350 and line a cookie sheet with parchment paper.
Using a large bowl, beat together the sugar, pumpkin puree, and butter until combined.
Beat in the egg and red gel food coloring until combined.
Using a medium bowl, whisk together the dry ingredients.
Gradually beat the dry ingredients into the wet until a soft dough forms.
Fold in the chocolate chips.
Scoop dough onto the cookie sheet.
Place into the oven and bake for 12-15 minutes.
Allow to cool for a few minutes before enjoying
