The History of Red Velvet Cake
This cake’s history goes back to the 13th century.
Hundreds of years ago, cakes were traditionally a sweet kind of bread. There were many times, people would put dried fruits and nuts in their cake recipes. Because these desserts were abrasive and had a roughened feel to them.
Then 500 years later bakers began to make dessert more appealing. They could find ways to break down the flour in the recipes, so cakes could be softer and more appealing.
The Original Red Velvet Cake
You must go back in time to understand the traditional red velvet cake. Cakes that were called velvet first came into existence during the Victorian Era. This was during the 1800s that recipes would frequently call for the use of cocoa for fancy dessert cakes.
They would call these cakes “velvet” cakes and serve them at fancy gatherings. Velvet lets the guests know the cake will have a smooth and soft texture. Describe the soft, smooth surface of the cake itself.
World War II
The cocoa ingredient would help break down the coarse flour. As a result, the flour was softer, and the cake was velvety.
A chemical reaction between the cocoa and acid gives it the color red. Your natural cocoa has a lot of acidities and works well with buttermilk and baking soda.
During the 1900’s cake recipes with cocoa as the main ingredient began to come about. People found recipes for cocoa velvet cakes, red cocoa cakes, and other “cocoa” types of cakes.
Finally, in 1943, a popular cookbook, “The Joy of Cooking,” debuted a red velvet cake. Irma S Rombauer, the cookbook maker, comically states she doesn’t like the cake.
But, she felt she had to be fair to her consumers to include the recipe for red velvet cake. The Joy of Cooking, 1943 recipe was the cake’s first national mention.
Who deserves credit?
There are many different ideas as to who can take credit for the very first red velvet cake. The Adams Extract company claims they are the ones responsible for the cake ever existing. The Adams company made a lot of money selling their red food coloring to make red velvet cake.
The Waldorf Astoria Hotel also says they are the ones who should get the credit. According to the Waldorf Astoria Hotel, they are where it all started with the Red Velvet cake.
While there are many theories, there’s no solid proof of who deserves credit for bringing the red velvet cake to the United States.
Red Velvet Chocolate Chip Pumpkin Cookie Recipe
Ingredients
- 1 cup pumpkin puree
- 1 cup sugar
- 1 cup butter unsalted sweet cream softened
- 1 egg large
- 1 tbsp food coloring super red gel
- 2 cup flour
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp kosher salt
- 2 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- 3.4 oz. chocolate pudding mix
- 3 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 350 and line a cookie sheet with parchment paper.
- Using a large bowl, beat together the sugar, pumpkin puree, and butter until combined.
- Beat in the egg and red gel food coloring until combined.
- Using a medium bowl, whisk together the dry ingredients.
- Gradually beat the dry ingredients into the wet until a soft dough forms.
- Fold in the chocolate chips.
- Scoop dough onto the cookie sheet.
- Place into the oven and bake for 12-15 minutes.
- Allow to cool for a few minutes before enjoying
