Ingredients
  

Cookie Ingredients:

  • 1 cup unsalted sweet cream butter softened
  • ¾ cup canola oil
  • 1 ¼ cup light brown sugar
  • 1 cup powdered sugar
  • 2 tsp pure vanilla extract
  • 2 tbsp cold water
  • 2 large eggs
  • 6 cup flour
  • 1 tsp kosher salt
  • ½ tsp baking soda
  • ½ tsp cream of tartar

Caramel icing Ingredients

  • 2 tbsp unsalted sweet cream butter softened
  • 3 tbsp whole milk
  • ½ cup light brown sugar packed
  • 1 cup powdered sugar
  • ¼ tsp kosher salt
  • 1 tsp pure vanilla extract

Instructions
 

Cookie Directions:

  • 1. Preheat oven to 350 degrees and line two cookie sheets with parchment paper.
  • 2. Using a large bowl, beat together the butter, oil, sugars, water and vanilla until combined and smooth.
  • 3. Beat in the eggs one at a time until combined.
  • 4. Using a large bowl, whisk together the flour, salt, baking soda and cream of tartar.
  • 5. Gradually beat in the dry ingredient into the wet ingredients until a soft dough forms.
  • 6. Using a mini ice cream scooper, scoop out some dough and roll it into a ball and place onto the cookie sheet.
  • 7. Using a flat bottom of a glass, lightly press the dough ball into a thick disk.
  • 8. Using the back of a spoon, make an indent into the cookie.
  • 9. Repeat steps for more cookies.
  • 10. Place into the oven and bake for 8 minutes
  • 11. Allow to cool

Icing Directions:

  • 1. Using a large bowl, beat the butter, milk, sugars, vanilla, and salt until combined and smooth.
  • 2. Fill in the center of the cookies and allow icing to harden.
  • Enjoy!
