What Will I Need to Make these Pumpkin Oreo Bars?


Brownie Ingredients include 1 – 13×9 box of milk chocolate brownie mix, 3 large eggs, water, and canola oil. Make sure you get the family-size package of Halloween Oreos to get the festive orange color for the bars. Last but not least, you will need mini chocolate chips.

The ingredients for the Pumpkin Cheesecake portion of the dessert are cream cheese, softened, and pumpkin puree. You will also need white sugar, 2 large eggs, pure vanilla extract, and kosher salt. (ingredient measurements are included in the recipe card below)

Are These Hard to Make?

No, actually, they are not hard to make at all. First, make sure to preheat your oven to 350 degrees (F) and line a 9×9 baking pan with parchment paper. Using a large bowl and hand mixer, beat together all of the brownie ingredients. Pour your batter into the baking dish.

Next, you will top the brownie batter with a layer of whole Oreos. Now you can set this aside for the time being.

Using another large mixing bowl, beat together the cream cheese, pumpkin puree, sugar, vanilla, pumpkin spice, and salt until smooth and combined. Beat in the eggs, 1 at a time, until smooth and combined.

Pour this mixture over top of the brownie batter and layer of Oreos.

Beat in the eggs, 1 at a time, until combined and smooth. Chop up about 5-8 Oreo cookies and sprinkle them on top of the cheesecake batter. Now sprinkle the 1/2 cup of mini chocolate chips on top. Bake in the oven for about 75 minutes or until the center is set and the sides start to peel away from the parchment paper. Allow cooling to room temperature before placing it into the fridge to cool overnight.

Cut into bars and enjoy!

Notes

The extra time is for putting in the fridge overnight. Obviously if you make these in the morning you could just keep them in the fridge till dessert time.
