What Will I Need to Make these Chocolate Mousse Cheesecakes?

Chocolate Cookie Layer
For the chocolate cookie layer, you will need flour, cocoa powder, baking soda, sugar, and kosher salt. These conclude all you need for the dry ingredients for the chocolate cookie layer. Wet ingredients include unsalted butter which has been softened. Also 2 large egg yolks, whole milk, and pure vanilla extract.
Cream Cheese Layer
The cream cheese layer calls for the following ingredients. Two eight-ounce bricks of cream cheese softened, sour cream, two large eggs, sugar, kosher salt, Hershey’s Dark cocoa powder, and pure vanilla extract.
Chocolate Mousse Layer
To make the chocolate mousse layer you will need these ingredients. You will need three large egg yolks heavy whipping cream, and whole milk. In addition, you will need semi-sweet chocolate chips, crushed Oreos, and powered sugar. Along with the semi-sweet normal size chocolate chips, a cup of mini chocolate chips for topping.
How Do I Make Each Layer of These Individual Cheesecakes?
Bottom cookie layer
First, make sure to preheat your oven to 350 degrees and line a cupcake pan with cupcake liners. Using a large bowl, whisk together the flour, cocoa powder, baking soda, and salt together. Using a standing mixer, beat together the butter and sugar until light and fluffy. Now beat in the egg yolk, milk, and vanilla extract.
Next, gradually mix in the dry ingredients until combined. Spoon about 1 tablespoon of the batter into each cupcake liner. Then bake this step in the oven for about 5-7 minutes. Once baked set them aside to cool.

Cheesecake Filling Layer
For this layer bring the oven temp down to 325 degrees. Using a standing mixer, beat together the cream cheese and sugar until smooth and creamy. Beat in the sour cream, vanilla, cocoa powder and salt until combined. Beat in the eggs, 1 at a time until combined.
Scoop about 1/4 cup of the cheesecake batter into the lined cupcake sections. Now bake layer in the oven for 17-21 minutes or until the edges start to turn a light golden brown color and the center is set. Allow cooling completely.
Chocolate Mousse Layer
Now for the chocolate mousse layer. You will need to use a medium saucepan and mix together the egg yolks, powdered sugar, and 1/3 heavy whipping cream. Then place over low heat until it starts to thicken and almost is doubled in size while continuing to whisk consistently.
Now remove from the heat and stir in the chocolate chips until melted. Then allow to cool to room temperature.
In a large bowl, beat the 1 1/3 cup heavy whipping cream until stiff peaks form. Whisk 1/4 cup of the whipped cream into the melted chocolate to lighten it. Scoop 1/4 cup of the whipped cream into the piping bag and set aside.
Scoop all of the whipped creams into the chocolate mixture and gently fold until combined. Lastly, fold in the crushed Oreos.

Directions on decorating
Now you will scoop 1 tbsp of the mousse onto the top of each cheesecake. Then pipe a dollop of whipped cream and sprinkle the mini chocolate chips on top.
