Easter is the time of year when we get together for bunny cupcakes and for family gatherings. Some people celebrate the resurrection of Christ. While others get together to celebrate the non-Christian side of Easter, egg hunts, and Easter baskets. Either way, there is food and desserts, and fellowship.

There is usually way too much food and many delicious desserts. You will find cakes, pies, fluffy desserts, and cupcakes. The kids will love these cupcakes added to the annual spread. Especially with the cute little bunnies added to them.

What Do I Need to Make these Bunny Cupcakes?

For the cupcakes you will need:

  • 1 box chocolate fudge cake mix
  • 3 large eggs
  • 1 ¼  C whole milk
  • ½ C unsalted sweet cream butter softened

To make the peanut butter frosting you will need:

  • ½  C unsalted sweet cream butter softened
  • ½  C creamy peanut butter
  • 1 ½  C powdered sugar
  • 1 tsp. vanilla extract
  • 3 Tbsp heavy whipping cream
  • 1 package of Reese Peanut Butter Bunnys
  • 1 large piping bag
  • 1 large container of Easter Sprinkles

To make the vanilla frosting you will need:

  • 1 C unsalted sweet cream butter, softened
  • 3 C powdered sugar
  • 2 tsp. vanilla extract
  • 5-7 Tbsp heavy whipping cream

Chocolate Cupcake Ingredients

  • 1 cake mix chocolate fudge
  • 3 eggs large
  • ½ cup butter softened, unsalted, sweet cream
  • cup whole milk

Peanut Butter Frosting Ingredients

  • ½ cup butter unsalted sweet cream, softened
  • ½ cup creamy peanut butter
  • ½ cup powdered sugar
  • 1 tsp  vanilla extract
  • 3 tbsp heavy whipping cream
  • 1 package Reese Peanut Butter Bunnys
  • 1 container Easter Sprinkles large

Vanilla Frosting Ingredients

  • 1 cup butter unsalted sweet cream, softened
  • 3 cup powdered sugar
  • 2 tsp  vanilla extract

Chocolate frosting Ingredients

  • ½ cup butter unsalted, sweet cream, softened
  • ¼ cup Hershey Cocoa Powder
  • cups powdered sugar
  • 1 tsp vanilla extract
  • 3 tbsp heavy whipping cream

Instructions
 

Cupcake Instructions

  • Preheat the oven to 350 degrees F and line a cupcake pan with liners.
  • Using a hand mixer, beat the cake mix, butter, milk, and eggs until combined.
  • Fill the cupcake liners about ¾ full.
  • Place into the oven and bake for 21 minutes.
  • Allow cooling completely on the counter.

Peanut Butter Frosting Instructions

  • Using a standing mixer, beat together the butter, peanut butter, powdered sugar, heavy whipping cream, and vanilla extract until combined, smooth and fluffy.
  • Scoop into another bowl and set aside .

Vanilla Frosting Instructions

  • Using a standing mixer, beat together the butter, powdered sugar, heavy whipping cream, and vanilla extract until combined, smooth and fluffy.
  • Scoop into a second bowl.

Chocolate Frosting Instructions

  • Using a standing mixer, beat together the butter, cocoa powder, powdered sugar, heavy whipping cream, and vanilla extract until combined, smooth and fluffy.
  • Scoop into a third bowl.

Decorating the cupcake

  • Place the piping bag into a large cup and fold the sides over.
  • Take 1 spoon full of the vanilla frosting and scoop it into 1 side of the piping bag.
  • Take 1 spoon full of the peanut butter frosting and scoop it into a second side of the piping bag.
  • Repeat the same steps with the chocolate frosting.
  • Pour the sprinkles into a bowl.
  • Using the ice cream scooper, scoop vanilla frosting onto the cupcake and smooth lightly into a thick disk.
  • Coat the frosting in the sprinkles.
  • Using the piping bag, pipe a dollop of frosting into the center of the cupcakes.
  • Place a Reese peanut butter bunny into the tri flavored frosting.
