  • Make sure all ingredients are at room temperature.
  • Add grated carrots and chopped pecans in the end and fold gently.

  • 1-9×13 pan


Blondies Ingredients:

  • 1 cup butter unsalted, sweet cream, melted
  • cup brown sugar
  • 2 tsp vanilla
  • 1 large egg
  • 1 egg yolk
  • 1 cup carrots finely grated
  • cup flour
  • 2 tbsp flour
  • ½ tsp ground ginger
  • ½ tsp cinnamon
  • ½ tsp salt
  • ¾ cup pecans chopped

Frosting Ingredients:

  • ½ cup butter unsalted, sweet cream, softened
  • 1 8 oz cream cheese softened
  • 1 tsp vanilla
  • 2 cups powdered sugar 
  • ground cinnamon to sprinkle on top of the frosting


Blondies Instructions

  • Preheat the oven to 350 degrees and spray a 9×13.
  • Using a medium bowl, whisk together the flour, ginger, cinnamon and salt until combined .
  • Using a large bowl, whisk together the melted butter, brown sugar and vanilla until combined.
  • Whisk in the egg and egg yolk.
  • Gradually whisk in the dry ingredients until combined.
  • Fold in the grated carrots and the chopped pecans.
  • Scoop the batter into the prepared baking pan and bake in the oven for 30-35 minutes.
  • Allow cooling.

Frosting Instructions

  • Using a standing mixer, beat all ingredients together until combined.
  • Spread evenly onto the top of the bars.
  • Sprinkle with the ground cinnamon.
  • Allow frosting to harden slightly before cutting into bars and enjoying.
